What a mistake...no more iOS standalone.

iMac late 2013
macOS Catalina 10.15.7
LC 9.6.7 Rc2 with Pro-Pack
xCode 12.4
iPhone iOS 14.4.2
iPad iOS 15.4
Having a Mac that cannot be upgraded to OSX 11, once I updated my iPad to iOS 15 I realised that I could not test my standalone on it. No side loading, no installs using Xcode.
So, after that, I was VERY careful to not upgrade the iPhone. Even with continuous harassing Mac dialog telling me to update the iOS, several time a day.
Then, this morning, the Mac told me it could not communicate anymore to the iPhone, unless I did a small OSX upgrade. Unfortunately I pressed OK and now I cannot create iOS standalones anymore and no testing on real devices. My only option seems to be to trow away my perfect 27" iMac and buy (which I am not ready to) a new Mac with the apple chip.
Anybody with a solution?
