The problem with translating mandatory legalese (GDPR compliance) into human-readable form.
A rewrite is on the way
https://github.com/audacity/audacity/discussions/1225 and if you look at the source code on github, most of what gets sent up (only in online mode, note) is opt-in, with only the update checking and crash reporting opt-out.
I do use Audacity here: my usb cassette digitizer runs a bit fast, and Audacity allows me to lock in a nice 78% speed reduction and a nice noise filter. For anything more professional I've got the Harrison Mixbus, but it's overkill for many smaller jobs.

Mind you, I'm not saying you shouldn't look for an alternative to Audacity, but I'm hanging onto mine, at least for now.

So am I, but I am not upgrading it.
