It would be useful if LiveCode could issue a statement as to what version of Unicode

Do you mean "compiled with"? What issue have you run into?

I haven't run into any "issues", or problems with Unicode. 
But I remember a while back certain glyphs in Unicode 11 were not showing up in LC fields.
