Let me rephrase what Stam was saying:

How do they know, unless there are ancient texts, anticipating this thread, that say things like "this letter sounds like a "z", not like an "s".

And then we need another text stating what an "s" sounds like...

Sorry to say that sounds about as accurate as Attenborough’s Prehistoric world (where they basically with CGI not only recreate dinosaurs to most likely shape but then attribute both physical characteristics and more importantly animal behaviour that seem most likely).

The keywords here are “seem most likely” because that is informed of our current experience and applying that to something millions of years ago.

A bit like pronunciation of a language thousands of years ago based on our current thinking and experiences.
